With Summer finally here and the farmers markets in full bloom, we are feeling particularly inspired but one veggie (or fruit if you choose to believe).  Yes, we’re smitten by the tomato.  It’s in season and cheers us up whether in its raw form, adding color to a dish, combined in a sauce, or taking its place on the brunch drink list.  And as such an accessible veggie, it’s easy to forget how fantastic it is FOR us.  With glowing skin especially in season, the tomato acts modest when it comes to its benefits.  Besides its commonly known heart and bone benefits, the tomato can rosy those cheeks in more ways than one.  It contains the carotene lycopene, one of the most powerful antioxidants out there.  Lycopene was been proven to improve the skins ability to protect against harmful UV rays, acting as a sunscreen from the inside out.  It’s also high in vitamins A, C, and K so the tomato combats signs of aging, reduces free radicals (maintaining support of skin and hair), and promotes retaining moisture in the body.  I discovered one of my favorite tomato friendly recipes at a yoga school in New York.  Tavo Toast, as it’s called, is your choice of bread (Holeman & Finch anyone?), sliced avocado, tomato, flax seed oil, vegan butter, salt, and pepper.  Simple?  Certainly.  But it’s the perfect treat on a hot summer day.  So take a visit to the farmers market this week, pick up some tomatoes, and put them to work!
